Zesty Lemon Cake
"When life gives you lemon, make anything with it"!! I don't mind because, I just love everything made out of lemon, be it a lemonade, Indian style lemon pickle, lemon in our food dishes, lemon as a beauty routine, lemon fragrances and the list can go on... There is something about lemon that just ups my moods and just everything feels so refreshing and amazing.
I had a few lemons in my fridge and while the Summer hitting everywhere but why not enjoy a zesty tasty melt in the mouth lemon cake with just a few simple ingredients. So let's get into making the cake.
Recipe for Cake:
200gm butter
2 cups sugar
4 eggs
Juice of a lemon
Lemon Zest 2 Tbsp
Vanilla Essence 1/2 tsp
Salt 1/4 tsp
250gm Cake Flour
100ml milk
Wash the lemon well and pat dry, scrape the lemon zest and keep aside. Take room temperature butter and beat well until pale now add the sugar little by little and combine it well. Now add the eggs one by one, juice of a lemon, zest, vanilla essence, salt, and the cake flour and gently fold in now add the milk and combine. Pre-heat your oven for 180°C, butter and line your cake pan and pour in the batter. Tap, tap, tap! On the counter top to release any air blocks. Bake for 35-40 minutes or until a toothpick inserted comes out clean.
Eat it plain or with buttercream or a scoop of ice-cream should be just perfect.
